Favorite cornbread recipe
1 can black beans (rinsed)
1 onion diced
1 head garlic minced
1 bell pepper diced
1/2 cup corn or 1 corn off 1 ear
1 can Rotel
1 can tomato paste
In skillet combine beans and veggies, cook until softened.
Add Rotel, spices (to taste) and paste. Add water as needed to slightly thin the mixture.
In a greased skillet spread half the cornbread mixture, top with filling, then cover with other half of cornbread mixture.
Bake according to directions given with cornbread recipe.
